This spicy and warming Christmas bake is the ideal way to use up leftover roast dinners! Add some spice to your leftovers for a delicious meal that everyone will love.


450 cooked turkey
500g leftover vegetables
100g leftover roast potatoes
1 Kohinoor Southern Madras Cooking Sauce
1 onion, diced
25g butter
100g grated cheddar
Chopped coriander to serve


  • Heat the butter in a pan and sauté the onion until lightly cooked
  • Add the turky and fry for 2 minutes
  • Add the Southern Madras Cooking sauce and bring to the boil
  • Arrange leftover potatoes and vegetables in a dish and pour the turkey Madras on top
  • Sprinkle with cheddar and coriander and bake at 180˚C for 20 minutes until golden brown
  • Serve with crusty bread
