One of the tastiest and sweetest holidays, pancake day, is finally here! With so much choice over toppings, we’ve decided to mix together our two favourite breakfasts: chai and pancakes. Try our chai spiced pancakes for a delicious Indian twist on your traditional pancakes.
Ingredients
260g plain flour
2 tbsp caster sugar
2 tsp baking powder
pinch of salt
1 tsp ground cardamom
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp nutmeg
1 tsp ground ginger
1 tsp vanilla extract
3 eggs
375 ml whole milk
30g butter
Method
- Sieve together the flour, baking powder, salt, and spices in a large bowl
- Make a well in the centre and whisk the eggs in one at a time
- Slowly add the vanilla and milk to the mixture whilst whisking
- Heat a large frying pan
- When hot, add the butter and melt
- Add the melted butter to the mixture and mix well
- When the pan is hot enough, use a ladle and spoon your mixture in
- Cooking for 2-3 minutes before flipping
- When the pancake is golden on both sides, take out of the pan and keep warm
- Cook the rest of the pancakes
- Serve with syrup and fresh fruit
