Eggnog is the perfect Christmas drink. It’s warming, creamy, and simply irresistible. Try our eggnog recipe with an Indian twist using classic chai spices.


1 cup full-fat milk
1 cup double cream
3 chai tea bags
155g brown sugar
6 eggs, separated
1/2 cup espresso
3 tbsp granulated sugar


  • In a medium sauce pan, bring milk and cream to simmer. Add chai tea bags and allow to rest for 30 minutes to infuse. After 30 minutes, strain the milk mixture and discard tea bags
  • Whisk together brown sugar and egg yolks until the mixture thickens. Add the milk mixture and espresso and whisk
  • In a separate bowl, whisk egg whites with granulated sugar until stiff peaks form
  • Gently fold in the egg whites to the milk mixture
  • Serve warm or chilled
